Go to my account and then message filters and choose what you want or don't

You can't.

Every profile can look at yours unless you hide your profile from everyone or block each profile individually.

You can set message filters to stop certain genders mailing you, and if you set it so men can't then they won't show on your 'Who Looked' list, but they still would have looked.
